August Recipe of the Month: Watermelon Salsa

Looking for a quick, refreshing recipe to spice up your summertime eats? Watermelon is in season here in Boston and we should take full advantage of that! This easy-to-make watermelon salsa is a perfect tortilla dip at a barbeque or a simple way to make brown rice more exciting. The great thing about this nutritious delight is that you can add it to any meal and prepare it with the things you enjoy!
Total time: 15 minutes
Yield: 3-4 cups
- Zest from one lime
- ¼ cup fresh lime juice (about three limes)
- Freshly ground pepper
- 3 cups of finely chopped watermelon
- 1 cucumber, finely diced
- 1 mango, finely diced
- 1 jalapeño pepper, seeded and minced
- 1 small red onion, finely chopped
- 8 basil leaves, finely chopped
- ½ teaspoon of garlic salt
Mix lime juice, lime zest, and pepper in a bowl. Add the watermelon, cucumber, mango, jalapeno, onion and basil to the bowl – mix gently. Chill until ready to serve. Add garlic salt before serving. Serve over brown rice or grilled chicken as meal or with pita (or tortilla) chips as a snack.
