This is a great tasting side dish that won’t have you missing the potatoes. A nice substitution for high calorie scalloped potatoes but this one is loaded with potassium, Vitamin A, and is low in carbohydrates. You’ll swear you’re eating the real thing!
Makes 5 servings
1 16-ounce package of frozen cauliflower florets
4-ounce Neufchatel cheese, (low fat cream cheese) cut into chunks
1 cup cheddar cheese, shredded
½ cup plain low-fat Greek yogurt
¼ cup green onions
1 tsp garlic powder
Salt and pepper to taste
2 slices turkey bacon, cooked and crumbled
Preheat oven to 350 degrees F and spray a 9×9 inch baking dish with non-stick spray.
Cook the turkey bacon according to package directions and allow to cool. When cool enough to handle, crumble into small pieces. Cook cauliflower florets according to package directions, this can be done in the microwave or on the stovetop. When fully cooked, place in a large bowl and mash florets into chunks. Add the shredded cheddar cheese, Neufchatel cheese, Greek yogurt, garlic powder, and salt and pepper to the bowl and stir until combined. Gently fold in the crumbled turkey bacon. Spread the mixture into prepared baking dish and bake for 25 minutes until cheese is bubbling and slightly golden.
